Rosemary Chicken Salad

Ingredients

  • For the salad:
  • 4 slices smoked bacon diced
  • 2 chicken breasts
  • salt and pepper for seasoning
  • 2 tsps rosemary
  • 2 handfuls spinach
  • 8 cherry tomatoes halved
  • 1/2 small red onion diced
  • 1 avocado sliced
  • For the dressing:
  • 2 tbsps apple cider vinegar
  • 1 tbsp lemon juice
  • 2 tbsps olive oil
  • 1/2 tsp chives
  • 1 garlic clove minced
  • salt and pepper for seasoning

Directions

  • Fry the bacon in a shallow pan until crisp and set aside Season the chicken with salt, pepper and rosemary Cook for 6 minutes in the shallow pan on each side
  • Cut into slices and set aside Plate up the chicken, bacon, spinach, tomatoes, red onion and sliced avocado
  • Whisk together the ingredients for the dressing Pour over the salad
