For the salad:4 slices smoked bacon diced2 chicken breastssalt and pepper for seasoning2 tsps rosemary2 handfuls spinach8 cherry tomatoes halved1/2 small red onion diced1 avocado slicedFor the dressing:2 tbsps apple cider vinegar1 tbsp lemon juice2 tbsps olive oil1/2 tsp chives1 garlic clove mincedsalt and pepper for seasoning

Fry the bacon in a shallow pan until crisp and set aside Season the chicken with salt, pepper and rosemary Cook for 6 minutes in the shallow pan on each sideCut into slices and set aside Plate up the chicken, bacon, spinach, tomatoes, red onion and sliced avocadoWhisk together the ingredients for the dressing Pour over the salad
