Ingredients

  • 1 cup Cos Salad leaves finely diced
  • 1 cup Mesculin salad finely diced
  • 1/4 cup Finely diced Red onion
  • 1/4 cup finely Shredded beetroot
  • 1/4 raw red rice - cooked
  • 250 g baby beetroot quartered
  • 1/2 cucumber seeds removed and sliced
  • 1 Tbsp pickled red onion
  • 1 Tbsp Dried cranberries- finely diced
  • 200 g baby Heirloom tomatoes- halved
  • 1/4 cup crumbled feta
  • 1 Tbsp finely chopped basil
  • 1 Tbsp Hemp Seeds

Directions

  • With the lettuce leaves at the bottom of the dish, layer each ingredient
  • Serve with a olive oil and balsamic reduction, season with Salt & Pepper
