Traditional Papas with Pumpkin

Ingredients

  • 1/2 large pumpkin (approx 1kg), peeled and cut into chunks
  • 500 ml water
  • 1 tbsp butter
  • 2-3 tbsp sugar (depending on preference)
  • Pinch salt
  • 4 tbsp all purpose flour
  • to taste Sweet ground cinnamon

Directions

  • Add the pumpkin and water to a large saucepan and season with a pinch of salt. Cover with lid and steam boil the pumpkin until the water has evaporated and the pumpkin is super soft. Mine took about an hour and I would shake the pan often to avoid the pumpkin sticking and to stop the steam escaping avoided lifting the lid as much as possible.
  • Using a blender, blend the pumpkin until smooth.
  • Return to a medium-low heat and add the butter, sugar and flour. Gently simmer stirring often for 5 minutes.
  • Allow to rest for 10 minutes. Serve sprinkled with cinnamon to taste.
