Traditional Papas with Pumpkin

1/2 large pumpkin (approx 1kg), peeled and cut into chunks500 ml water1 tbsp butter2-3 tbsp sugar (depending on preference)Pinch salt4 tbsp all purpose flourto taste Sweet ground cinnamon

Add the pumpkin and water to a large saucepan and season with a pinch of salt. Cover with lid and steam boil the pumpkin until the water has evaporated and the pumpkin is super soft. Mine took about an hour and I would shake the pan often to avoid the pumpkin sticking and to stop the steam escaping avoided lifting the lid as much as possible.Using a blender, blend the pumpkin until smooth.Return to a medium-low heat and add the butter, sugar and flour. Gently simmer stirring often for 5 minutes.Allow to rest for 10 minutes. Serve sprinkled with cinnamon to taste.
