Ingredients

  • 1 chicken breast
  • 2 sliced garlic
  • 1 red chilli
  • 1 small shallot sliced
  • 1 table spoon corriander seeds
  • 1/2 teaspoon black pepper corns
  • 1/4 teaspoon salt
  • 1 tablespoon palm sugar
  • Oil for frying

Directions

  • Poach the chicken in water still cooked.
  • Leave to cool the shred
  • In a pestle and mortar add all the other ingredients and make the paste
  • Add to the shredded chicken and mix best to use a metal spoon or you spoon will be a vivid yellow
  • Coat the bottom of a fringe pan with oil and stir fry the chicken mixture until its fragrant and dried our
  • Lay out on paper and drain off any excess oil allow to cool and shred once more. This is lovely to sprinkle on rice or a salad
