60 g cake flour170 g all purpose flour2 1/2 tsp baking powder1 tsp baking soda1/2 tsp salt3 bananas (ripe)2 eggs60 g brown sugar58 ml vegetable oil30 g butter (melted)1 tsp vanilla essence20 g orange peel

Mix and sift flour, baking powder, baking soda and salt in a bowlMash bananas in another bowl and mix with the rest of ingredientsUse the handheld mixer to mix the batter into smooth textureFold the mixture with flour to form a batterPreheat oven to 180°C for 10 min and prepare lined panPour batter to lined pan, gently tap the pan and bake at 180°CSlit the centre after 12 min for a better rise and continue to bake at 180°C for another 33 min
