Spicy Cashew Chicken

Ingredients

  • Handful Cashew Nuts
  • Handful Chopped Green Onions
  • 1 Red Bell Pepper, diced
  • Seseme seeds
  • Sauce
  • 2 tsp grated garlic
  • 2 tsp grated ginger
  • 2 tbsp soy sauce
  • 1/2 tbsp brown sugar
  • 1/2 tsp seseme oil
  • 1 tsp chili flakes
  • Chicken
  • 2 chicken breasts, diced
  • 2 tbsp cornflour
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp chili flakes
  • 1 tsp garlic powder

Directions

  • Combine all the sauce ingredients together in a bowl
  • Combine the chicken, salt, pepper, garlic powder and chili flakes together in a separate bowl
  • Heat oil in a large frying pan or wok at a medium high heat
  • Add the chicken to the pan and lightly brown (about 5 mins)
  • Add the pepper and fry for another couple of minutes
  • Add the nuts and fry for a few minutes
  • Add the sauce to the pan a fry until it thickens (3-5 minutes)
  • Serve with rice and top with seseme seeds and green onions
