Egg and Proscuitto Wrap with Avocado

1 egg, beatensalt and pepper, for seasoning1/2 teaspoon mixed herbs2 slices proscuitto ham1/2 avocado1/2 teaspoon lemon juice1/2 teaspoon coriander leafdrizzle of olive oil

Heat, on a medium to high heat, a drizzle of olive oil in a 20cm frying pan In a small bowl beat the egg Add the seasoning and mixed herbs Pour the egg into the pan, it will naturally spread into a circular shapeCook for about 1 minute, the underside of the egg should be lightly browned and easy to flip over Flip the egg and cook for another minute Remove from the frying pan and lay two slices of proscuitto ham onto the eggIn a small bowl add the avocado, lemon juice, coriander, seasoning and mash into a smooth paste Spread over the ham Starting at one end tightly roll up the wrap
