Egg and Proscuitto Wrap with Avocado

Ingredients

  • 1 egg, beaten
  • salt and pepper, for seasoning
  • 1/2 teaspoon mixed herbs
  • 2 slices proscuitto ham
  • 1/2 avocado
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon coriander leaf
  • drizzle of olive oil

Directions

  • Heat, on a medium to high heat, a drizzle of olive oil in a 20cm frying pan In a small bowl beat the egg Add the seasoning and mixed herbs Pour the egg into the pan, it will naturally spread into a circular shape
  • Cook for about 1 minute, the underside of the egg should be lightly browned and easy to flip over Flip the egg and cook for another minute Remove from the frying pan and lay two slices of proscuitto ham onto the egg
  • In a small bowl add the avocado, lemon juice, coriander, seasoning and mash into a smooth paste Spread over the ham Starting at one end tightly roll up the wrap
