KAIRAS/ RAW MANGO SWEET PICKLE

1 cup raw mango chopped1/2 cup jaggery2 tbsp oil1 tsp coarse methi/ fenugreek powder2 tsp red chilly powder1/2 tsp mustard seeds1/4 tsp hing1/4 tsp turmeric1/4 cup waterto taste salt
Directions

Heat a pan. Add oil, when heated add mustard seeds. Let them crackleAdd hing, turmeric powder and the chopped raw mango. Cover and cook for 2 minutes.Add 1/2 cup of water and let it cook further until mango is soft.Add jaggery, red chilly powder, roasted methi powder and salt to taste. Cook this for another 2-3 minutes. Make sure the jaggery is dissolved.This is a tangy, delicious side dish that enhances your meals.
