Butter / GheeBasmati Rice (soaked)Red Onion (Diced)Quorn chicken2-3 tbsp Curry Powder Mix (coriander, chilli, cumin, fennel, tumeric, white pepper, cinnamon, black pepper, cardamon, star anise, nutmeg, bay leaf, clove)Chicken stockWaterCarrots (diced)Spinach (diced)Raisins (diced)Cashews/Almonds

Soak basmati rice for 30minutesMake curry paste by adding some water to curry powder mix. Marinade quorn pieces with curry paste.Drain rice. Heat butter, onions and raisins in pot. Stir fry rice till fragrant. Add chicken stock, chopped veg, marinated quorn and cover with water. Cover and let it steam for 5-10minutes till rice is cooked.When done, leave the pot on the stove for 15 minutes to cool down. Add cashews to serve.
