Smashed chicken

Ingredients

  • 2 chicken breasts
  • Breadcrumbs - I had packet crumbs in the pantry
  • Small dish of milk
  • Small dish of plain flour
  • Olive oil to shallow pan fry

Directions

  • Flatten chicken breasts with a rolling pin or meat tenderiser- they need to be about 1cm thick to cook quickly. If they are large cut in half before flattening.
  • Set out dishes of flour, milk,breadcrumbs. Start by pressing each piece of flattened chicken firmly into the flour on both sides.
  • Dip one piece of chicken into milk on both sides and straight into the breadcrumbs and press firmly. Remove to a plate and repeat until all chicken pieces are coated.
  • Heat some oil (I use olive oil) in a frying pan and when hot cook the chicken in batches, approximately 4 minutes per side. Check one to see the the chicken in cooked through.
  • Serve immediately with salad of your choice.
