PB Mac & Cheese

Ingredients

  • 3 C veg broth
  • 1/2 C chopped onion
  • 1.5 C chopped carrots or butternut squash
  • 1 clove garlic, chopped
  • .5 lb. Cooked pasta
  • .5 C nutritional yeast
  • 2 T almond butter
  • 2 t lemon
  • 2 t Miso
  • 1 t ground mustard
  • .5 t smoked paprika
  • .25 t turmeric
  • 1 t Savory Spice
  • 1 C steamed broccoli or other green
  • .25 C breadcrumbs

Directions

  • Put onion, garlic, and carrots in pot w/ 1C broth and cook until very soft 8min
  • Oven 375
  • Blend 2C broth, veggies, yeast, miso, and everything else until smooth. Check seasonings, combine with pasta, stir in cooked greens. Transfer to baking dish, top with breadcrumbs and sprinkle with paprika and parmesan. Bake about 20min until GBD.
