1 big onion chopped2 carrots chopped4 cloves garlic chopped2 bag leaves2 tsp thyme8 cups chicken stock4 chicken breastsSalt and pepper
Directions

On medium heat, fry onions and carrots for about 5 minutes. Add garlic, thyme and bay leaves and stir. Add chicken stock and bring to the boil.Add chicken and mushrooms and make sure stock covers the pot. (You can add pasta here) Add salt and pepper and simmer for 20 minutes or till chicken is cooked.Take chicken out, and cut it into small pieces. Return to the pot and season with salt and pepper if need be. I had my chicken soup with quinoa.
