Ingredients

  • 1 big onion chopped
  • 2 carrots chopped
  • 4 cloves garlic chopped
  • 2 bag leaves
  • 2 tsp thyme
  • 8 cups chicken stock
  • 4 chicken breasts
  • Salt and pepper

Directions

  • On medium heat, fry onions and carrots for about 5 minutes. Add garlic, thyme and bay leaves and stir. Add chicken stock and bring to the boil.
  • Add chicken and mushrooms and make sure stock covers the pot. (You can add pasta here) Add salt and pepper and simmer for 20 minutes or till chicken is cooked.
  • Take chicken out, and cut it into small pieces. Return to the pot and season with salt and pepper if need be. I had my chicken soup with quinoa.
