Roasted Spiced Pumpkin

Ingredients

  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 3 tbsp olive oil
  • to taste Salt
  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1/2 large pumpkin (approx 900g-1kg)

Directions

  • Heat oven to 180c.
  • Mix all the ingredients together in a bowl. Ensure the pumpkin is coated well with the spices.
  • Spread the pumpkin out in a single layer on a baking tray.
  • Bake for 50-60 minutes. I cooked mine until the pumpkin was really soft but if preferred slightly Al dente reduce the cooking time.
