Chicken thighs with roasted veg and new potatoes

Ingredients

3 carrots1 onions1 clove garlic6 Chicken thighs6 tbsp Olive oil2 pepperJuice of 1 lemon30 Kalamata olives2 tsp paprikaSalt and pepper1 kg new potatoes
Directions

Put crushed garlic, lemon juice, salt, oil and paprika in a bowlCut a few slices in the chicken then add them to the mixture and coat them. Leave to marinate for at least an hourCut onions into thick half moons, carrots into sticks, pepper roughly chopped. Season with salt and pepperWash and half/quarter the new potatoes.Removing the chicken from the marinade and add the veg to the juice, mix. Add to oven proof dishPut chicken on top of the veg and cook for 1hr10 at 200oC
