Chicken thighs with roasted veg and new potatoes

Ingredients

  • 3 carrots
  • 1 onions
  • 1 clove garlic
  • 6 Chicken thighs
  • 6 tbsp Olive oil
  • 2 pepper
  • Juice of 1 lemon
  • 30 Kalamata olives
  • 2 tsp paprika
  • Salt and pepper
  • 1 kg new potatoes

Directions

  • Put crushed garlic, lemon juice, salt, oil and paprika in a bowl
  • Cut a few slices in the chicken then add them to the mixture and coat them. Leave to marinate for at least an hour
  • Cut onions into thick half moons, carrots into sticks, pepper roughly chopped. Season with salt and pepper
  • Wash and half/quarter the new potatoes.
  • Removing the chicken from the marinade and add the veg to the juice, mix. Add to oven proof dish
  • Put chicken on top of the veg and cook for 1hr10 at 200oC
