Microwave Khandvi

Ingredients

  • Batter
  • 1 cup gram flour (besan)
  • 1 cup yogurt
  • 2 cups water
  • Salt, Turmeric powder
  • 1 tbsp oil
  • Tempering
  • 2 tbsp oil
  • Curry-leaves
  • Hing
  • Mustard seeds
  • Sesame seeds
  • 2 green chillies
  • Chopped coriander
  • Shredded coconut

Directions

  • In a microwave safe bowl, combine the besan, yogurt and water. Add salt, turmeric and oil.
  • Microwave this mixture for 2 mins. Stir it well so that no lumps remain.
  • Repeat step 2 for 2 more times and finally microwave the mixture for 1 minute and then stir. Total microwave time here is 7 minutes.
  • Immediately spread the microwave prepared batter on a parchment paper.
  • Once cooled completely, divide it vertically and start rolling.
  • Meanwhile, heat oil for tempering. Add mustard seeds, hing, sesame seeds, green chillies and curry leaves.
  • Pour the tempering on top of the rolled khandvi.
  • Finally garnish with some chopped coriander and shredded coconut.
