Khichdi with Achari Raita

Ingredients

  • 1 cup gobindbhog rice or any aromatic rice
  • 1 cup split Moong dal
  • 1 tsp ginger paste
  • 1 tsp cumin powder
  • 1/2 tsp red chilli powder
  • 1 tsp turmeric powder
  • 2 green chillies
  • 1/2 cup mixed chopped veggies
  • 1/2 cup cauliflower florets
  • 1/2 cup chopped tomatoes
  • 1/4 tsp sugar
  • 1 tsp ghee
  • to taste Salt
  • 1 tsp mustard oil
  • 1 tsp cumin seeds
  • Ingredients for raita
  • 1 cup hung curd
  • 4 tsp aachar/pickle
  • 1/2 tsp fennel seeds
  • 1/2 tsp fenugreek seeds
  • 1/2 tsp mustard seeds
  • 1/4 tsp carom seeds
  • to taste Salt

Directions

  • Heat a oil in a Kadhai add rice sauté for few minutes transfer it and then washed it, now add dal to the same kadhai sauté it for few minutes then transfer it to another bowl
  • Now fry the cauliflower florets once done keep it aside then sauté the veggies or few minutes then add the ginger paste and other spices cook it until the raw smell goes out
  • Now add dal and rice and salt and cook it for few minutes then add water cover it and cook it until the rice and dal gets soft
  • Now add the fry cauliflowers, tomatoes and little sugar cook it for few minutes then add ghee and turn off the flame
