Traditional Lebanese Mjadara

Ingredients

1 cup brown Lentils1/2 cup white long rice (Uncle Ben’s)1 tsp salt10 twists of fresh black pepper1 tsp ground Cinnamon5 cups water1 medium onion1 Tbsp sauté Olive Oil
Directions

Wash lentils in a strainerSoak rice is cold water.Finely dice onion and set aside.In a medium pot, caramelize diced onion with 1 tbs of oil over medium to high heat for 5 minutes.Add lentils to pot and add 5 cups of water, then bring to a boil. Cover and let it simmer for 30 minutes.Add the rice, salt, pepper and cinnamon. Stir to combine. Bring to a boil then simmer for 15 minutes (until water is absorbed)Serve with cucumber yogurt salad, or caramelized onion wings.
