Traditional Lebanese Mjadara

Ingredients

  • 1 cup brown Lentils
  • 1/2 cup white long rice (Uncle Ben’s)
  • 1 tsp salt
  • 10 twists of fresh black pepper
  • 1 tsp ground Cinnamon
  • 5 cups water
  • 1 medium onion
  • 1 Tbsp sauté Olive Oil

Directions

  • Wash lentils in a strainer
  • Soak rice is cold water.
  • Finely dice onion and set aside.
  • In a medium pot, caramelize diced onion with 1 tbs of oil over medium to high heat for 5 minutes.
  • Add lentils to pot and add 5 cups of water, then bring to a boil. Cover and let it simmer for 30 minutes.
  • Add the rice, salt, pepper and cinnamon. Stir to combine. Bring to a boil then simmer for 15 minutes (until water is absorbed)
  • Serve with cucumber yogurt salad, or caramelized onion wings.
