500 g minced beef1 large brown onion2-4 garlic cloves1-2 carottes1 tsp Orange or lemon peel1 1/2 cups Red wine1 Tbs Worcester sauce1/2 Tbs Anchovy pasre1-2 cups water1 tbs Fennel seeds2 tbs herbs de provence or your own mixture of thyme,,oregano1 can chopped tomatoes1 1/2 Tbs tomato paste1/2 cup tomato sauce2 laurel leaves

Saute beef then drain grease with sieve or paper towels and set asideSaute onions and garlic wih medium heat in olive oil then add carottes and lemon peel, saute another 2 minutesAdd beef to pan add worcester and red wine salt and pepper. Let simmer in red wine 5 minutesAdd tomatoes, tomato paste and anchovy pasteAdd oregano fennel seeds or herbs to Provence Add laurel leaves and mix thoroughlyAdd enough tomato sauce to for your desired fluidity.Add a cup of water and simmer at leastv1 hr. If longer simply check if more water should be added and continue to simmer.Simmer to desired consistency and fluidity.Check salt level (taste it!!) And serve!
