Pecan Maple Chocolate Chip Cookies (low Sugar, Grain-Dairy Free)

Ingredients

  • Wet Ingredients
  • 3 eggs
  • 1/3 cup Eloo
  • 1/3 cup truvia brown sugar blend
  • 1 tsp vanilla
  • 1 tsp maple flavor
  • Dry Ingredients
  • 2.5 cups Cashew flour
  • 1/2 cup Chopped Pecans
  • 1/2 cup sf chocolate chips
  • 1/2 cup sf vanilla chips
  • 1/2 cup chopped dates
  • 1/2 tsp baking powder
  • 1/2 tsp pink salt

Directions

  • Mix wet ingredients in a large bowl and combine til smooth and well blended
  • To that bowl add ingredients in that order and mix well. Let sit 5 minutes for the cashew flower to absorb moisture for a more evenly baked cookie.
  • Bake in a preheated 375°oven for 10 minutes, checking halfway to turn rack for even baking.
