Cauliflower Salad

Ingredients

  • 1 head Cauliflower, florets separated into bite-sized pcs
  • 1 tsp cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Garlic
  • 1 Cup Cos lettuce - shredded
  • 1 Cup Mesculin- shredded
  • 2 Tbsp crumbled feta
  • 1 Tbsp dried cranberries
  • 1/2 cucumber, seeds removed and diced
  • 4 Gherkins diced
  • Handful walnuts roughly chopped
  • 1/4 cup finely chopped red onion
  • 2 Tbsp finely shredded basil

Directions

  • In a mixing bowl, coat the cauliflower florets with the cumin, garlic and paprika, add 1 tbsp olive oil and toss to coat well. Roast in a preheated oven till tender about 30min. Set aside.
  • Layer the salad ingredients, top with the cooked cauliflower. Sprinkle some feta and basil over the top. Enjoy!
