Mixed Mushroom Salad

Ingredients

  • 100 g Shiitake Mushrooms
  • 200 g Swiss Brown Mushrooms
  • 200 g Portobello Mushrooms
  • 1 tsp Crushed Garlic
  • 1 tsp Smoked Paprika
  • 2 Tbsp Fresh finely chopped Parsley
  • Layer the salad:
  • 1 Cup Red &Green Cos Mix (diced)
  • 2 Cups Mesculin Salad (diced)
  • 2 Tbsp Feta Crumbled
  • 2 Tbsp Basil (finely chopped)
  • 2 Tbsp Toasted pinenuts

Directions

  • On a BBQ cook the mushrooms and flavorings (Paprika, Garlic & Parsley) in a foil dish
  • Layer the salad with above ingredients.
