Ingredients

  • 4 chicken breasts
  • 80 g gluten free flour
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp white pepper
  • 1 beaten egg or egg replacer (I used Orgran)

Directions

  • Mix the spices with the flour and put them in a bowl big enough to dip your chicken into.
  • Put your egg replacer or egg into another bowl of equal size.
  • Now dip your chicken breast into the egg replacer and turn to coat all over. Use your finger to remove any big lumps of replacer if that’s what you are using.
  • Now dip the chicken into the flour and make sure it is well coated in the mixture.
  • Start preheating your oven to 190 C. And while it’s heating get a frying pan on and add a good cm or so of vegetable oil.
  • Fry the chicken in both sides until golden and crunchy then place the chicken into a baking tray. Finish in the oven for 15-25 mins depending on the size of your chicken. Cut through the largest breast to make sure it is fully cooked before serving.
