Stuffed Peppers

Ingredients

  • 1 sweet red pepper
  • 1 handful chopped red onion
  • 2 button mushrooms
  • 1 handful chopped cherry tomatoes
  • 12 chopped kalamata olives
  • 1 tbsp avocado oil
  • 1 tsp lemon juice
  • 1/4 cup cottage cheese
  • 1/2 tsp parsley and oregano
  • Salt and pepper, 1/4 tsp mustard powder
  • 2 tbsps parmesan cheese

Directions

  • Fry the onions in the oil until they begin to soften. Then add the mushrooms.
  • Wash the pepper and cook it at 180 in the oven for 15 minutes, turning once. Remove and cook.
  • Slice pepper in half and remove the seeds.
  • Mix all other ingredients together and stuff the peppers. Cover with parmesan cheese. Cook at 180 for 15 mins. Serve.
