1 sweet red pepper1 handful chopped red onion2 button mushrooms1 handful chopped cherry tomatoes12 chopped kalamata olives1 tbsp avocado oil1 tsp lemon juice1/4 cup cottage cheese1/2 tsp parsley and oreganoSalt and pepper, 1/4 tsp mustard powder2 tbsps parmesan cheese
Directions

Fry the onions in the oil until they begin to soften. Then add the mushrooms.Wash the pepper and cook it at 180 in the oven for 15 minutes, turning once. Remove and cook.Slice pepper in half and remove the seeds.Mix all other ingredients together and stuff the peppers. Cover with parmesan cheese. Cook at 180 for 15 mins. Serve.
