Wash and patbdry the chicken then rub with salt.Preheat oven at 250c and bake it for 45mins.When done,lrt it cool and chop into pieces.Cover and set asideStir fry shallot until soft then add chicken.Put the.mayonaise,lemon juice,black pepper,vinegar and chilli.Then keep mixing until all are incorporated.Season with salt according to your taste.
