Peanut Butter and Chocolate Waffles Sandwiches

210 g gluten free self raising flour2 tablespoons caster sugar225 ml natural soya yoghurt40 g dairy free spread, melted1 egg150 ml dairy free milk4 tablespoons peanut butter4 tablespoons dairy free chocolate spread (see recipe)

To make the waffles, combine all the ingredients in a large bowl and mix until light and fluffy Heat up your waffle iron and spray with olive oil Pour the mixture into the waffle iron and cook for 8 minutes until golden brownAdd the peanut butter to the basic waffle mix prior to cooking Once cooked, spread the waffles with dairy free chocolate spread Sandwich two waffles together and slice diagonally
