Not Panang curry

Ingredients

  • Olive Oil
  • 1 chopped Onion
  • 1/2 Sliced Bell pepper
  • 1/2 tube garlic puree
  • Tbsp Medium Curry Powder
  • 1 +1/2 tsp Tomato puree
  • 1 tsp honey
  • 500 g chicken breast or thigh
  • 1 Can coconut milk
  • 1 tsp Garlic granules
  • 1 tsp Hot sauce

Directions

  • Brown/cook the chicken in the oil
  • Sweat onion and pepper with the chicken
  • Add the curry powder and stir in for a minute
  • Add garlic puree and tomato puree and stir for 1 minute
  • Add in the coconut milk, honey and hot sauce and stir.
  • Stir occasionally and reduce until desired texture, I prefer a thicker curry
