Eggplant with minced meat

Ingredients

  • 4 big eggplants - sliced medium thick
  • 2 medium onions
  • 250 g minced meat
  • 3 ripe tomatoes - dieced or a can of dieced tomatoes
  • to taste Salt, cinnamon & black pepper -
  • 2 tbsp vegetable oil

Directions

  • Pre heat oven at 200 degrees Celsius
  • Brush the sliced eggplant pieces with olive oil and salt, bake In Oven untill well cooked and have a golden brown color
  • Prepare the filling : in heated skillet,add vegetable oil, and onions, stir untill they are pale and translucent, add meat, stir untill all liquids are dried and meat changes its color, taste with salt and spices
  • Add pealed and diced tomatoes, stir all together untill well combined and thickens
  • In a suitable oven dish or try, add some of the meat mixture, then layer eggplant pieces, then another meat layer, repeat untill all ingredients are finished
  • Enter a heated oven at 250 degrees Celsius to combine all ingredients together
  • Serve hot
