Eggplant with minced meat

4 big eggplants - sliced medium thick2 medium onions250 g minced meat3 ripe tomatoes - dieced or a can of dieced tomatoesto taste Salt, cinnamon & black pepper -2 tbsp vegetable oil

Pre heat oven at 200 degrees CelsiusBrush the sliced eggplant pieces with olive oil and salt, bake In Oven untill well cooked and have a golden brown colorPrepare the filling : in heated skillet,add vegetable oil, and onions, stir untill they are pale and translucent, add meat, stir untill all liquids are dried and meat changes its color, taste with salt and spicesAdd pealed and diced tomatoes, stir all together untill well combined and thickensIn a suitable oven dish or try, add some of the meat mixture, then layer eggplant pieces, then another meat layer, repeat untill all ingredients are finishedEnter a heated oven at 250 degrees Celsius to combine all ingredients togetherServe hot
