1 cup brown sugar1/2 cup orange juice / water / brandy1/4 cup treacle100 g baking butter3 cups mixed dried fruit1 teaspoon ground cinammon2 teaspoon mixed spice1/2 teaspoon salt2 eggs lightly beaten2 cups plain flour1 teaspoon baking Soda1 teaspoon vanilla extract

In a pot over medium heat cook sugar, liquid of choice, treacle, butter, mixed fruit and let it bubble away cook for about 5 minutes till the fruit is all plump and softTake the pot off the heat and let it cook to room temperature before proceedingIn the meantime sift the dry ingredients together flour, salt, spices together and add together with the vanilla and egg to the cooked cooked dried fruitsSpoon into a double lined 20 cm tin and bake at 325 for about 60-75 minutesLeave in tin to cool completely and cover with cling film Best eaten day after or a couple of days If you use alcohol and want it to mature pour a tablespoon of brandy on the cakeCover cake with cling film and let it sit for maturing process Enjoy
