Courgette and Cheese Muffins

Ingredients

  • 225 g Self-Raising Flour
  • 175 ml Semi-Skimmed Milk
  • 50 ml Oil
  • 1 Egg
  • 100 g Cheddar Cheese
  • 1 Courgette
  • Black Pepper

Directions

  • Preheat oven to 200°C.
  • Place the muffin cases in the muffin tin.
  • Cut the ends off the courgette.
  • Grate the courgette and cheese.
  • Mix all the ingredients together to form a smooth batter.
  • Divide the mixture equally between the muffin cases using 2 spoons.
  • Bake for 20 minute, until golden.
  • Allow to cool on a cooling rack.
