55 g dairy free spread5 tablespoons honey250 ml dairy free natural yoghurt1 egg65 ml lemon juice310 g gluten free self raising flour1 teaspoon xanthan gum60 g walnuts, chopped

Preheat the oven to 180 oCPlace the dairy free spread and honey in a small saucepan Heat gently until meltedIn a large bowl stir together the flour, xanthan gum and walnuts In another bowl whisk together the natural yoghurt, egg and lemon juice Pour this and the honey mixture into the dry ingredientsMix until well combined Spoon into a greased or lined 12 hole muffin tinBake in the oven for 20 minutes Allow to cool before serving
