Yoghurt, Honey & Walnut Muffins

Ingredients

  • 55 g dairy free spread
  • 5 tablespoons honey
  • 250 ml dairy free natural yoghurt
  • 1 egg
  • 65 ml lemon juice
  • 310 g gluten free self raising flour
  • 1 teaspoon xanthan gum
  • 60 g walnuts, chopped

Directions

  • Preheat the oven to 180 oC
  • Place the dairy free spread and honey in a small saucepan Heat gently until melted
  • In a large bowl stir together the flour, xanthan gum and walnuts In another bowl whisk together the natural yoghurt, egg and lemon juice Pour this and the honey mixture into the dry ingredients
  • Mix until well combined Spoon into a greased or lined 12 hole muffin tin
  • Bake in the oven for 20 minutes Allow to cool before serving
