Chorizo & Mozzarella Gnocchi Bake

Ingredients

1 tbsp olive oil1 onion, finely chopped2 garlic cloves, crushed120 g chorizo, diced2 x 400g can chopped tomatoes600 g gnocchi125 g mozzarellabasil
Directions

Heat the oil in a frying pan over a medium heat, and fry the onions and garlic for 10 minutes, until soft.Add the chorizo, and fry for another 5 minutes. Add tomatoes, season, then bring to a simmer before adding the gnocchi and cooking for 8 minutes whilst stirring often.Heat the grill to high. Stir ¾ of the mozzarella and basil through the gnocchi. Place the mixture in a baking dish, top with the remaining mozzarella, then grill until cheese is melted and golden (or for 3 minutes).Season, scatter the remaining basil, and serve with salad.
