Chorizo & Mozzarella Gnocchi Bake

Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 120 g chorizo, diced
  • 2 x 400g can chopped tomatoes
  • 600 g gnocchi
  • 125 g mozzarella
  • basil

Directions

  • Heat the oil in a frying pan over a medium heat, and fry the onions and garlic for 10 minutes, until soft.
  • Add the chorizo, and fry for another 5 minutes. Add tomatoes, season, then bring to a simmer before adding the gnocchi and cooking for 8 minutes whilst stirring often.
  • Heat the grill to high. Stir ¾ of the mozzarella and basil through the gnocchi. Place the mixture in a baking dish, top with the remaining mozzarella, then grill until cheese is melted and golden (or for 3 minutes).
  • Season, scatter the remaining basil, and serve with salad.
