150 g butter80 g coconut / demerara sugar80 g granulated sugar2 tsp vanilla extract1 medium egg200 g plain flour1/2 tsp bicarbonate of soda1/4 tsp salt1 Terry’s Chocolate Orange

Preheat oven to gas mark 5/ electric-190°C/ fan-170°C.Line a large baking tray with greaseproof paper. Roughly chop the chocolate orange.Beat together the butter and sugars. Then beat in the vanilla and egg.Sieve in the flour, bicarbonate of soda and salt. Mix until combined.Stir in the chopped chocolate orange.Teaspoon the mixture 1-2 inches apart on the lined baking tray.Bake in the centre of the oven for 10 minutes or until the edges are light brown and the middle is soft.Leave on on the baking tray to firm up and cool down, then transfer onto a cooling rack to cool completely.Enjoy on their own cold or with a scoop of vanilla ice cream!
