Terry's Chocolate Orange Cookies

Ingredients

  • 150 g butter
  • 80 g coconut / demerara sugar
  • 80 g granulated sugar
  • 2 tsp vanilla extract
  • 1 medium egg
  • 200 g plain flour
  • 1/2 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 1 Terry’s Chocolate Orange

Directions

  • Preheat oven to gas mark 5/ electric-190°C/ fan-170°C.
  • Line a large baking tray with greaseproof paper. Roughly chop the chocolate orange.
  • Beat together the butter and sugars. Then beat in the vanilla and egg.
  • Sieve in the flour, bicarbonate of soda and salt. Mix until combined.
  • Stir in the chopped chocolate orange.
  • Teaspoon the mixture 1-2 inches apart on the lined baking tray.
  • Bake in the centre of the oven for 10 minutes or until the edges are light brown and the middle is soft.
  • Leave on on the baking tray to firm up and cool down, then transfer onto a cooling rack to cool completely.
  • Enjoy on their own cold or with a scoop of vanilla ice cream!
