Galangal Fried Chicken (Ayam Goreng Laos)

2 medium chicken breast10 cm galangal3 pcs lemongrass6-8 cloves garlic4 shallots1/2 tsp turmeric powder1 tsp salt1/2 tsp sugar100 ml water (or more)

Cut chicken to your desire. I usually cut mine into 2 inch cube. set aside.Peel and cut galangal and lemongrass into pieces, put into blender along with garlic, shallot and turmeric, add water, blend until smooth.In a saucepan, put the chicken and blended ingredients, boil in a medium heat until it dry out.Deep fried the chicken until golden brown.Serve with jasmine rice and sambal.
