Greek style peas - ARAKAS LATHEROS

Ingredients

  • Frozen peas
  • 1 onion finely chopped
  • 2 carrots cut into chunks
  • 2 potatoes cut into chunks
  • 1 tin good quality tinned tomatoes
  • 4 tablespoons Good quality olive oil
  • Parsley & Greek feta for decoration

Directions

  • Par boil the carrots and potatoes. Then gently fry the onions in olive oil and add your peas and tinned tomatoes. Bring it back to a simmer and add the carrots and potatoes.
  • Cover and simmer for about 10 mins, if the sauce gets to dry add water, if your sauce gets to runny add breadcrumbs…you can’t lose!! But make sure the potatoes stay firm and in shape. Plate up the ARAKAS LATHEROS with a scattering of parsley and Greek feta and a squeeze of lemon.
