Smoked Mackerel and Poached Eggs

2 slices gluten free bread2 eggs2 smoked mackerel filletssalt and pepper for seasoningsprinkle of chives
Directions

Bring a pan of boiling water to a gentle boil Turn down to a simmer and crack in the eggs Simmer for 3 minutes Remove from the pan with a slotted spoonToast the gluten free bread Heat the mackerel in the microwave for 1 minute Top the toasted bread with the mackerel, poached eggs, chives and season with salt and pepper
