Mike s Grilled BBQ Chicken Strips

Ingredients

  • ● For The Proteins
  • 2 lbs Fresh Chicken Strips [fat trimmed]
  • ● For The Basic Chicken Brine [keep at 38° - optional]
  • 1/2 Cup Table Salt
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 Cup Ground Black Pepper
  • as needed Ice Cubes
  • ● For The Chicken Marinade
  • 4 Drops Liquid Smoke [not extract]
  • 1/2 tsp Granulated Garlic Powder
  • 1/2 tsp Granulated Onion Powder
  • 1/2 Fresh Ground Black Pepper
  • 1/2 tsp Cracked Sea Salt
  • 1/2 tsp Ground Cumin
  • as needed Olive Oil
  • 1 LG Ziplock Bag
  • ● For The BBQ Sauce
  • as needed Your Choice

Directions

  • Start with 2 pounds of fresh - not frozen chicken strips.
  • Rinse strips and cut any fat from chicken.
  • Brine strips for one hour for added moisture in chicken. [optional step]
  • Pat strips dry and add to a Ziplock Bag. Add all Marinade items and massage well. Refrigerate for 1/2+ hour.
  • Grill thin chicken strips for 4 to 5 minutes. Add sauce at finish.
  • Your choice but Heinz, Jack Daniels and Sweet Baby Rays [especially sweet baby rays] are all great BBQ sauce brands.

  • Serve BBQ chicken over mashed potatoes.
