Ingredients

  • 2 kg chicken/ or whole chicken as desired
  • vegetable oil/ enough quantity to fry the chicken
  • 6 cups water/ as needed
  • 2 tsps of salt
  • spices
  • 1 onion
  • 4 bay leaves
  • 2 cinnamon sticks
  • For serving:
  • 1 cup (approximately) of lemon juice as desired

Directions

  • Clean the chicken well
  • In a wide deep pan, pour oil and fry the chicken pieces until they turn a reddish colour, then remove from oil.
  • In a wide pot, pour enough quantity of water with spices and add the chicken pieces, boil until well done. Add salt and cook for almost 1 hour until a consistent broth has formed
  • Remove spices from the broth
  • Pour the chicken stew and serve in a dish. Add the lemon juice. Serve hot with vermicelli rice on the side
