Ingredients

  • 250 g lamb, beef, mutton or chiken mixed mince
  • 2 Cups rice
  • 1 tsp saffron
  • 1 medium sized onion
  • 1 tsp Salt or to taste
  • 1 freshly ground Pepper or to taste
  • 1 tsp Persian spices mix (Adhvieh)
  • 1/2 tsp turmeric powder
  • 4 tbsp Oil
  • 2 freshTomatoes 1 fresh green chillies

Directions

  • #Prepartions: #1- Soak the rice with 40-45 minutes. #2- Soak the saffron in boiling water for 25-30 minutes. #3- Grate the onion #4- Boil 6 cups of water
  • Mix the grated onion with the lamb mixed mince in a large bowl. Add salt, black pepper sumac or Persian spices and turmeric powder to the bowl and mix thoroughly until well mixed. Pour vegetable oil in a frying pan.
  • Spread and flatten the beef mixture across the pan and place the pan on stove over medium heat. Simmer the soaked rice until tender. Drain the rice in a colander and put it in a pot, add 2 tbsp butter top of the rice cover the pot with a napkin and put the lid on, cook for 10 minutes or untill fully cooked.
  • Go back to the kebab pan, allow the mince to become somewhat hardened, divide the flattened mince in 2 inches rows using a wooden wooden spatula turner. Allow the mince to fry on one side and flip them over to fry the other side.
  • Back to the rice pot, remove the napkin, pour in the saffron (zafran) mixture and cover the pot with the lid, continue cooking for 5 more minutes. Fry few tomatoes and fresh green chilli in a same pan and serv as a side dish.
  • #Tip: put all the ingredients with grated onions and mince puls 4-5 time in a food processor(do not over mix).
