Spaghetti al salmone e melanzane

Ingredients

  • 500 g spaghetti
  • 1 aubergine
  • 1 salmon fillet - remove the skin
  • Clove garlic
  • Tin chopped tomatoes
  • to taste Salt
  • Fresh parsley to serve
  • Olive oil
  • Oil for frying

Directions

  • Chop aubergine into small cubes. Fry in batches until golden brown. Drain and set a side
  • Being pot of salted water to the boil and cook pasta according to instructions. In another pan, heat some olive oil and cook garlic on medium until brown. Remove the garlic and add the tomatoes. Simmer for a min or two, meanwhile, chop the salmon into small pieces
  • Add the aubergine and salmon. Simmer for a few minutes while the pasta finishes cooking. The salmon will only take 3-4 mins. Drain pasta al dente and add to sauce
  • Mix well and serve with fresh parsley
