Spaghetti al salmone e melanzane

500 g spaghetti1 aubergine1 salmon fillet - remove the skinClove garlicTin chopped tomatoesto taste SaltFresh parsley to serveOlive oilOil for frying

Chop aubergine into small cubes. Fry in batches until golden brown. Drain and set a sideBeing pot of salted water to the boil and cook pasta according to instructions. In another pan, heat some olive oil and cook garlic on medium until brown. Remove the garlic and add the tomatoes. Simmer for a min or two, meanwhile, chop the salmon into small piecesAdd the aubergine and salmon. Simmer for a few minutes while the pasta finishes cooking. The salmon will only take 3-4 mins. Drain pasta al dente and add to sauceMix well and serve with fresh parsley
