Spicy Couscous

Ingredients

  • 1 Bunch Spring Onions - chopped
  • 1 Pepper - chopped
  • 2 tsp Garlic Puree
  • 1 tsp Chilli Powder
  • 1 tsp Cinnamon
  • 2 tblsp Vegetable Oil
  • 400 g Canned Chopped Tomatoes
  • 100 g Sweetcorn
  • 50 g Sultanas
  • 50 g Apricots - chopped
  • 140 g Tinned Pineapple
  • 150 g Couscous
  • 200 g Natural Yoghurt

Directions

  • Chop spring onions and pepper.
  • Put oil, spices, garlic puree and ½ spring onions into saucepan and cook 2 mins.
  • Put rest of onions into basin and add yogurt.
  • Add sweetcorn, pineapple, apricots, sultanas and tomatoes to saucepan and cook boil for 10 mins.
  • Measure couscous into mixing bowl and cover with 180ml boiling water. Cover bowl with plate and leave for 10-15 mins.
  • To serve – fluff couscous with fork and put onto plate. Put vegetable mixture on top and drizzle with yogurt topping.
