Ingredients

  • 4 large portobello mushrooms
  • 200 g grated Mature cheddar
  • 100 g grated Mozzarella
  • 50 g grated Parmesan
  • 1 tsp whole grain mustard
  • 1 egg
  • 100 ml double cream
  • 1 tsp Worcester sauce
  • Fresh thyme
  • Cracked peppercorns
  • Optional
  • Pulled ham hock
  • Poached eggs
  • Jalapeños
  • Sliced avocado

Directions

  • Preheat oven to 180’C.
  • Mix the cheddar and mozzarella.
  • Combine the rest of the ingredients and mix thoroughly before mixing with cheese.
  • Spoon the mixture onto the mushrooms and bake. Serve with a salad and a choice of the optional ingredients.
  • This recipe works well as a topping for fresh bread.
