Cheesy Mexican Nachos

Ingredients

  • 1 packet nachos
  • 1 cup boiled kidney beans/ Rajma
  • 2-3 cheese slices
  • 2/3 cup milk
  • 1 tbsp whole wheat flour
  • 1 tbsp butter
  • 2 tomatoes Chopped finely
  • 1 onion chopped finely
  • 1/4 cup sweet corn boiled
  • to taste Salt and black pepper powder
  • 1 tbsp oregano
  • 1 tsp chilli flakes
  • 1 tbsp oil

Directions

  • Heat oil in a pan. Add chopped onions. Cook till translucent. Add tomatoes, salt and pepper. Cook for 5 minutes. Keep aside.
  • Now take another pan, add butter and flour and mix. Now add milk and mix thoroughly so there are no lumps.
  • Chop cheese slices and add to the milk flour mixture. Add salt, pepper, oregano and chilli flakes. Keep aside and let it cool.
  • Spread Nachos in a plate. Add onion tomato salsa, then boiled rajma, then a layer of Cheese sauce. Spread some chilli flakes if you want.
  • Now spread some sweet corn and again a layer of cheese sauce. Your Loaded Cheese Nachos are ready
