Cheesy Mexican Nachos

Ingredients

  • 1 packet Nachos
  • 1/2 cup Rajmah (kidney beans)boiled
  • 1 Onion
  • 1 Tomato
  • 1 capsicum
  • handful Fresh coriander leaves
  • 4 Tsp Tomato sauce
  • 3 spoon Lemon juice
  • To taste Salt
  • 1/2 tsp black pepper powder
  • 1/2 cup Mozzarella cheese
  • 1/2 cup Tomato puree

Directions

  • Wash and finely chop onion tomato and capsicum. Take a bowl add chopped veggies, tomato purée and tomato sauce, add salt pepper and mix well. Add chopped fresh coriander leaves and mix well. The salsa is ready.
  • In a pressure cooker add rajmah, salt pepper and asafoetida (hing)cook for-15- mins.remove and keep aside.
  • Now take a platter and arrange nachos on it, make a layer of rajmah on it then put the prepared salsa on it and then top up with the grated mozzarella cheese and microwave for 1-2 minutes, the cheese will melt.
  • Serve hot.
