2 Chicken breasts Cut into 3 chunks250 g Sweet potatoes Peeled and cut into chunks1 Onion Cut into chunks1/2 broccoli head Cut into florets8 cherry tomatoes2 Garlic cloves Minced1 Tsp Rosemary1 Tsp Thyme1 Tbsp Olive oil1 Tsp Smoked paprika1 Tbsp Lemon juice100 Ml Chicken stocksalt and pepper for seasoning

Preheat the oven to 180 oC Place the sweet potatoes, onion, broccoli, cherry tomatoes, minced garlic, rosemary, thyme, olive oil, paprika, lemon juice and seasoning into a large bowl Mix until well combinedPour into a casserole dish and roast in the oven for 25 minutes Add in the chicken and chicken stock Return to the oven for 25 minutes
