Beef40 g cornflour2 tbsp oil2 tsp crushed ginger (thumbsize) minced650 g rump steak thinly sliced (or lean frying steak)2 cloves garlic chopped and minced30 ml soy sauce200 ml water30 g honey1/2 tsp chilli flakes (optional)2 spring onions finely choppedPinch salt and pepperMixed Veg1 red pepper -stripsMushroom - handful sliced1 courgette -sticks (defluffed)2 tsp water1 tsp sunflower oilNoodles400 g fresh egg noodles1 tsp sunflower oil

Coat beef in cornflour and set asideHeat pan add garlic and ginger constantly stirring for 30 seconds (do not brown)Add beef and pinch of salt and pepper and fry until cooked throughAdd soy sauce, water, honey and chilli flakes and simmer for 5 to 10 minsWhilst beef simmering prepare veg if not already doneAdd 1tsp oil to pan and stir fry veg 4 minutes before end of beef simmering, add water if neededAdd 1 tsp oil to seperate pan and stir fry noodles 2-4 mins stir constantlyOnce noodles and veg cooked add both to pan with beefMix well and serve immediately with spring onion on top
