Deep Fried Chicken (East Java Style)

Ingredients

  • 1/2 kg chicken (i use drummet)
  • 1 cm turmeric or 1 tsp turmeric powder
  • 2 cm galangal
  • 1 tsp coriander seed
  • 2 bayleaves
  • 2 lemongrass
  • 1/2 red onion
  • 4 garlic cloves
  • 1 tsp salt
  • 1/2 tsp sugar
  • 2 tbsp cooking oil
  • 5 cups water

Directions

  • Grind red onion, garlics, turmeric, and coriander seed
  • Put cooking oil in a pot, add ground spices, stir it in medium fire until turns golden.
  • Add lemongrass, galangal, bayleaves, salt and sugar, stir it well.
  • Add water, mix it well. Add the chicken, cover the pot, slow cook until the water reduces less than half.
  • Let it settle, when it cools down, deep fry the chicken.
