Deep Fried Chicken (East Java Style)

1/2 kg chicken (i use drummet)1 cm turmeric or 1 tsp turmeric powder2 cm galangal1 tsp coriander seed2 bayleaves2 lemongrass1/2 red onion4 garlic cloves1 tsp salt1/2 tsp sugar2 tbsp cooking oil5 cups water

Grind red onion, garlics, turmeric, and coriander seedPut cooking oil in a pot, add ground spices, stir it in medium fire until turns golden.Add lemongrass, galangal, bayleaves, salt and sugar, stir it well.Add water, mix it well. Add the chicken, cover the pot, slow cook until the water reduces less than half.Let it settle, when it cools down, deep fry the chicken.
