1 1/2 lbs boneless beef, cut into cube5 tbs cooking oil1 cinnamon stick3 cloves3 star anise3 cardamom podleaves Turmeric1 lemon grass (cut into four and pounded)1 cup thick coconut milk1 cup water2 tbs tamarind plup,soak in warm water for the juice and discard the seed6 kaffir lime leaves, very finely sliced6 tbs kerisik (toasted coconut)1 tbs sugar/ palm sugar to tasteto taste SaltSpice paste5 shallots1 inch galangal3 lemon grass (white part only)5 cloves garlic1 inch ginger1/2 inch raw turmeric (not powder)5 candle nut10-12 dried chilies, soak in warm water and seeded

Blend the spice paste all written above.dice the beefFry the paste until the water dry and oil come out from the pastePut beef, kaffir leaves and turmeric leaves also coconut and all spices except kerisik/ toasted coconut. Kerisik is last to add
