Homemade Sweet Spicy Potato Crisp

Ingredients

  • 8 pcs potato

  • 5 cloves garlic
  • 5 pcs shallot
  • 7 pcs red chilli
  • 2 pcs bird chilli eye
  • 2 tsp salt
  • Cooking oil (as needed)

  • 2 pcs bay leaves
  • 4 pcs keffir leaves
  • 2 tbsp palm sugar
  • 2 tbsp sugar
  • 1 cm galanga
  • Mushroom flavoring
  • 1 tbsp oil

Directions

  • Peel potatoes and greet the potatoes in smaller shape as in the pics (or can be any shape). Then put in salt water.
  • Process all ingredients at sauce section in food processor until smooth. Use cooking oil accordingly.
  • Fried the potatoes till crispy in small batches so it cooked faster. Then leave it aside while wait the oil goes down
  • Put oil and cook the sauce prepared before together with bay leaves, keffir leaves, palm sugar, sugar, flavoring, galanga.
  • Wait until it caramalized, thicked, and has a nice aroma. Then mix it well with the fried crisp potato accordingly.
  • After that, wait until it cool down and then put it in a closed jar.
