100 gm chopped carrot100 gm chopped potato100 gm chopped paneer100 gm chopped cauliflower2 chopped capsicum100 gm green peas2 tsp oil1/2 tsp mustard seeds1 tsp finely chopped onion1 tsp ginger garlic paste6 tsp tomato paste1 tsp cumin powder1 tsp garam masalaI tsp turmeric powder1 tsp chana masala4 tsp waterRed chili powder as per tasteSalt as per tasteChopped coriander leaves (optional)

Firstly wash all the vegetable properlyHeat oil in a large pan or kadhai over medium heatAdd mustard seeds,when mustard starts to pop up, add finely chopped onion,fry until lightly brown, then add ginger garlic paste, tomato paste, turmeric powder,garam masala, cumin powder, chana masala,chili powder and salt. Stir them for a minuteAdd all the chopped vegetables and water. Cover the lid and keep the heat at a minimum. Cook for 30 minutes and stir occasionallyAfter 30 minutes check if vegetables are cooked.Sprinkle some chopped fresh coriander leaves and serve mix vegetable sabzi with fresh paratha or Roti
