Egg Fried rice

Ingredients

  • 1 cup uncooked rice
  • 1/4 cup frozen peas
  • 2 diced carrot
  • 1/2 diced red pepper
  • 3 tblsn sunflower oil
  • 21/2 tblspn light soy sauce
  • 1 small yellow onion
  • 2 eggs
  • Water enough to cook the rice
  • to taste Salt

Directions

  • Cook rice according to packet instructions. Let it rest for 24hrs in a refrigerator.
  • Next crack the eggs in a bowl and whisk till combined.
  • Heat 2 tblspn of oil in a pan and add the eggs. Whisk together to combine and fold the eggs and immediately remove from the heat,set aside.
  • Next add the remaining sunflower oil,and fry the onions till softened.
  • Add the cooked rice along with carrots, red pepper. Combine everything
  • Next add soy sauce and combine with rice mixture
  • Next add frozen peas, combine everything together, and set aside to serve.
